Mediterranean White Bean Soup

Nothing is more satisfying on a cool autumn day than a hearty bowl of white bean soup. This filling soup is packed with nutritious white beans, flavorful veggies, and just the right amount of spices. Best of all, it's easy to make from scratch. Simply sauté some onions and garlic, then add in the white beans, diced carrots, and chicken stock. Let the soup simmer until the beans are tender, then season to taste with salt, pepper, and your favorite herbs. Serve hot with a crusty piece of bread for a complete meal. Butternut Squash Soup

One of my favorite things to cook in the fall is butternut squash soup. I love the rich, creamy flavor of butternut squash, and it's so easy to make a delicious soup with just a few simple ingredients. I always start by roasting the butternut squash in the oven. This brings out the natural sweetness of the squash and gives the soup a deeper flavor. Then, I add some homemade chicken or vegetable stock, along with some onions, garlic, and herbs.
