This simple traditional fondue recipe is great for a family fun night.
One clove of garlic crushed (to coat inside of pot)
1 tablespoon of butter
1 & 1/2 tablespoon of cornstarch separated
1 lb of Gruyère shredded
1/2 lb of Emmentaler cheese (can sub Jalsburg or any swiss cheese) shredded
1 cup of dry white wine (Chenin Blanc, White Bordeaux, Viogner, Kabinett Riesling)
Juice of lemon
1/2 Cup of Cooking Sherry
Ground pepper (fresh is best)
1 teaspoon of nutmeg
Vegetables, breads, and meats to dip in fondue
Rub the inside of a cheese fondue pot or enameled cast-iron pot with the garlic clove allowing the remnants of the pulp to remain in the pot.
On medium-low heat melt butter and slowly and add cornstarch while whisking continuously. For less 'flour' flavor allow the roux to cook for 7-10 mins without burning.
Add cheese handful at a time, ensuring it melts completely.
Add lemon juice , wine, and sherry until completely combined.
Add nutmeg and pepper.
Serve warm with your favorite dipping accoutrements!
